Interior Replacement

My 78 Warrior looks great until it comes to the interior. Plastic parts, door panels, seats, and carpets all need to be replaced. What should I expect to spend if I DYI the job? Can I have my local upholstery guy recover my seats and door panels, and do the plastic and carpets myself.
What should I start with, plastic parts, seats, or door panels?
