Running tanks dry?

I am a new pilot (one month) and I did all of my training in a Cherokee 180. I now have a 235. During training, we always switched tanks with fuel left in them and always landed with at least 1/4 tanks. In a 235, 1/4 in each tank leaves 21ish gallons of fuel on board. I was talking to someone about this at my local airport and they told me they just run each tank dry and switch over really quick. Since then, I have had quite a few people tell me the same thing. They said even if you don't switch quickly enough before the engine quits, the prop will windmill at cruise speed and you can just switch and the engine will fire up again.

Is running 3 of the tanks dry and just making sure you have plenty of fuel in the last tank to land a common and/or safe practice?
