Fitting for filling nose strut

I picked up this fitting for filling the nose strut, a bottle of nitrogen and a regulator. When I went to top off the strut I noticed two things...1) The regulator they gave me only goes to 100PSI, so that's a problem for sure, and 2) I expected to see a small pin in the center of the fill connector kind of like a bike pump where the pin opens the valve when it is screwed down.

Is this not the case? Is the valve a sort of one way valve where pressure flows one way but not the other? See pic of the fitting I have.
