Exhaust gasket help please!

Had my first annual done yesterday, no big findings, but I need to replace a couple of exhaust manifold gaskets. Looks easy enough, but I'm scared to death of breaking a stud.... They aren't clean and shiny. Any special techniques? Should I apply penetrating oil to the nuts first? And what about nuts? I've read that they should be replaced. Any and all info is appreciated. Oh, by the way, it's an O-320.
