For those pilots out there (which I'm sure is everyone but me :D )

During the take-off process, I know about "cockpit sterilization" and the breifing the passengers should recieve, but after you level off and its safe to talk, how do you engage in conversation with someone while listening to ATC? I mean if I were in a conversation it might take a time or two before I noticed someone was calling me (wether it be ATC or someone not in a conversation, just everyday life). It seems to be human instinct to block out nioses that aren't part of the current brain process. Thoughts/opinions?
