Larger Tires?

I’ve been reading more & more about pilots putting larger tires on their aircraft & just leaving off the wheel fairings. Obviously you would take a hit on your airspeed by doing that but flying in & out of soft grass strips as well a winter flying on snow covered strips would be an advantage.
Anybody know anyone who has gone this route with a Cherokee 140? Any STOL benefit on takeoff?
